My 5 Cheese Pizza

The pizza that we used to ask for at our old fave local, the Cookhouse restaurant until it closed down. It was either that or their amazing Tex-Mex. Lush! You can make it using white flour too, like the originals. I just chose to try wholemeal flour to start introducing healthier options, and it’s working. Everybody seems to be enjoying (at least not moaning).
Over the years, homemade pizza has become a more regular meal. Rather than take away pizza - which can be disappointing, if you don't get a good one - we make it ourselves. It’s not that hard and it can be a great way to engage the youngest in a fun, messy meal to make.
It's pretty simple. Just choose your 5 top cheeses and grate them enough for 3 pizzas (as per the dough quantity, below). We like it thin and crusty. The dough takes the following ingredients:
Dough
Strong Wholemeal flour: 550g
Table salt: 1 tsp
Olive Oil: 1 tbsp
Dry yeast: 1tbsp
Warm water: 350ml
Just mix it all until it looks like dough and leave it to rest for 30 minutes.
Tomato base
Tomato chunks: half a tin
Garlic powder: 3 tbsp
Tomato paste: 3 tbsp
Dried Oregano: 2 to 3 tbsp
Mix it all in a little casserole on the hob and if want, blend it all in.
Grate your 5 favourite kinds of cheese. Not too much, as the more the greasier. I usually use about one soup bowl of each cheese.
After 30 minutes, sprinkle it with flour and give it some more twists and turns and divide it equally into three. Work it into 3 round-shaped pizzas (stretch it till it’s wide enough to take the tomato paste and cheese, in a way that it doesn’t rip very easily. Add a good layer of tomato and then the cheese. You can add other bits if you wish. After all, it is your 5-Cheese Pizza.
This is actually a New Year's Eve tradition for us now, as tradition is not what it used to be. And, as a wholemeal feature, we also seem to feel satiated quicker: bonus!
